caramel apples - Recipe

Petite Caramel Apples
Prep: 20 minutes Cook: 25 minutes

8 to 10 small apples, such as lady apples
8 to 10 wooden craft sticks
2 cups coarsely chopped toasted nuts,
 toasted coconut, ready-to-eat sweetened
 cereal, and/or granola
1 cup whipping cream
3/4 cup granulated sugar
1/2 cup light-colored corn syrup
1/4 cup packed dark brown sugar

1. Lightly grease a large baking sheet; set aside. Wash apples; pat dry. Remove stems. Insert wooden sticks into stem end of each apple; set aside. Place chopped nuts, coconut, cereal, and/or granola in separate shallow dishes or pie plates; set aside.

2. In a medium saucepan combine whipping cream, granulated sugar, corn syrup, brown sugar, and butter. Cook and stir over medium-high heat until mixture just boils.

3. Reduce heat to medium. Attach a candy thermometer to the side of the pan (the tip of the thermometer should not touch the bottom of the pan). Boil mixture at a steady moderate rate, stirring frequently until thermometer reaches 248 [degrees] F, firm-ball stage (about 25 minutes). Remove from heat. Remove thermometer. Stir in vanilla.

4. Working quickly, dip each apple into the hot caramel, turning to coat all but the top inch or so. Lift apple out of caramel, twirling gently to let excess caramel run back into saucepan. (If caramel thickens, return saucepan to low heat. Stir in a teaspoon or two of milk.) Using a table knife, remove excess caramel.

5. Roll apple in desired topping, coating bottom half of apple. Place coated apple on prepared baking sheet. Serve warm. Or cool; cover loosely with plastic wrap. Refrigerate for several hours.

Nutrition facts per serving: 488 cal., 26 g total fat (10 g sat. fat), 45 mg chol., 56 mg sodium, 67 g carbo., 5 g fiber, and 3 g pro. Daily Values: 15% vit. A, 11% vit. C, 5% calcium, and 6% iron.
